Blueberry Muffin Baked Oats

Vegan baked oats are surprisingly simple to prepare and bring child-like joy to breakfast. Oats provide a source of whole grains and fiber that provide long-lasting energy. Blueberries are a well-known superfood filled with vitamins and antioxidants. Unsweetened applesauce serves as an effective, healthy sweetener. Baked together, these ingredients create a great breakfast that can be brought on the go.

Ingredients:

  • 1/2 cup oats
  • 1/4 cup unsweetened applesauce
  • 1/2 cup of blueberries
  • 1/2 cup of unsweetened plant milk
  • 1 tsp cinnamon
  • Optional: 1/8 cup of chopped walnuts, 1 tsp of cardamom (adds earthy flavor)

Recipe:

  1. Preheat oven to 350 degrees F.
  2. Add oats to a blender and blend for 5-10 seconds to grind the oats to a flour. The oats do not need to be completely ground.
  3. Add all ingredients to a glass oven-safe bowl. Mix until smooth. Bake for 16-18 minutes.
  4. Let stand for 5-10 minutes. Grab a spoon and enjoy.
