Ikarian Longevity Stew

~Recipe largely adapted from the Blue Zones Cookbook by Dan Buettner. Few modifications were made, and credit goes to the Blue Zones Cookbook team~

Ingredients – 4 servings:

  • Black-eyed peas – 1 can
  • Extra-virgin olive oil – 1/2 cup
  • Red onion – 1 large, finely chopped
  • Garlic cloves – 6, finely chopped
  • Fennel bulb – 1, chopped
  • Tomato – 1, finely chopped
  • Tomato paste – 2 tablespoons diluted in 1/4 cup water
  • Bay leaves – 2
  • Dill – 1 bunch, finely chopped
  • Oregano – 1/8 cup, finely chopped
  • Chives – 1/8 cup, chopped
  • Kale – 2 cups, chopped
  • Salt to taste

Instructions:

  1. In a large pan, heat half the olive oil over medium heat. Cook the onion, garlic, and fennel until soft, about 12 min.
  2. Add the black-eyes peas and toss to coat with oil. Add the tomato, tomato paste, and enough water to cover the beans by about an inch. Add the bay leaves.
  3. Bring the pot to a boil, reduce heat, and simmer for 10 min.
  4. Add the chopped dill, oregano, chives, and kale, and season with salt to taste. Simmer for 20 additional minutes.
  5. Remove from heat, and remove the bay leaves. If a large amount of water remains, pour it out until the mixtures resembles stew rather than soup (this will give a stronger flavor). Pour in the remaining olive oil, stir, and serve.
