-Chickpeas are one of the most versatile ingredients in the pantry. They are a nutritious bean that are chewy, easy to dress up, and a healthy stable in many diets around the globe, particularly the Mediterranean and India. Used here, they are the main staple of this simple salad that can be prepared in as little as 5 minutes. Modify to your tastes as you like.
Ingredients:
- Chickpeas – 1/2 cup
- Bell pepper – 1/2 chopped
- Onion – 1/3 cup chopped
- Kale – for salad base
- Cashew parmesan – 3 tablespoons
- Add: oregano, basil, dill, and/or thyme
Instructions:
- Add all ingredients to a salad bowl, mix, and serve. If you prefer the cashew parmesan to act more as a dressing, mix it with a small amount of water in a dish and heat in the microwave prior to adding to the salad.
