Lentil Penne with Marinara

~Be gentle, eat a lentil~

Ingredients:

  • Red lentil penne – 1/2 box
  • Zucchini – 1 cup
  • Marinara/tomato sauce – 1/2 cup
  • Garlic – 2 cloves minced
  • Spinach – 2 handfuls
  • Optional: home-grown tomatoes and herbs from your garden

Recipe:

  1. Chop zucchini into rounds and cook. Options include:
    • Air fryer: spray with avocado or olive oil spray and cook for 7-8 min.
    • Oven: spray with avocado or olive oil spray and cook at 375 F for 7-8 min on each side.
    • Pan fry: use a small amount of oil and cook on both sides until soft, about 3 min. You may add the marinara, spinach, and garlic here.
  2. Boil the lentil penne as directed by the package, usually 7-9 min.
  3. Combine the spinach and marinara sauce and heat in the microwave, if not already added when cooking zucchini.
  4. Combine all ingredients, serve, and enjoy.
