Toast Two Ways

A whole new reason to love whole wheat

Fancy toast is becoming an increasingly popular breakfast favorite with many different topping options. While white bread is made from refined flour and contains low fiber and nutrient content, whole-wheat bread is just the opposite. It is full of fiber and provides long-lasting energy due to the slow release of healthy carbohydrates. There are many delicious ways to make tasty, fun toast. This recipe adds superfood toppings including avocado and blueberries makes these toast ideas great for starting the day.

Ingredients:

  • Whole wheat bread – 2 slices
    • *Personal favorite is Ezekiel bread, often found in frozen section
  • Avocado – 1/3 of medium-sized avo
  • Blueberries – 1/4 cup (increase to 1/2 – 1 cup to have extra as a side)
  • Balsamic vinegar – 2 tablespoons
  • Dried oregano, thyme, italian seasoning, garlic salt, pepper, turmeric – per preference
  • Optional: add grape or cherry tomatoes – 1/4 cup chopped in half

Instructions:

  • Toast the 2 slices of whole-wheat bread in the toaster.
  • Slice 1: Once toasted, add the avocado and seasonings to 1 slice. If adding the halved grape/cherry tomatoes, microwave for ~20 sec and add the to toast. This will draw out the flavor of the tomatoes.
  • Slice 2: To the other slice, add the balsamic vinegar – soaking the toast – then add the blueberries. Blueberries will often roll off, so for ease, you can smash the blueberries with a fork. This creates a jam-like texture.
