
Did you know, chia seeds were once so popular that they were used as currency?
“Chia” is the ancient Mayan word for “strength.” These seeds are a good source of fiber and omega-3s, the latter of which are important for maintaining cardiovascular and brain health. Currently, researchers are exploring the correlation between omega-3s and prevention of cognitive decline and development of neurodegenerative disease. In the kitchen, these powerful seeds are also great liquid binders, making them the perfect ingredient for homemade puddings. This recipe uses peaches and vanilla, but any fruit(s) can be used. Try your favorites or a new combination.
Ingredients – makes 1 serving:
- Chia seeds – 2 tablespoons
- Unsweetened almond milk – 1/2 cup
- Peach – 1 medium
- Ground cinnamon – 1 teaspoon
- Ground ginger – 1/2 teaspoon
- Vanilla extract – 1/4 teaspoon
Instructions:
- Chop the peach and add to a blender or food processor. Add the almond milk and blend until it becomes pureed. You may add additional un-pureed chopped peaches if you’d like chewier bites.
- Add all ingredients to a bowl or jar. Mix until well combined.
- Refrigerate overnight or minimum 6 hours and watch your pudding congeal.
- Remove from refrigerator, grab a spoon, and enjoy.
